Taco Pasta Bake

If you love tacos and love pasta, then this recipe is a must for you!  It's creamy, flavorful and contains some delicious peppers.  I'm a huge fan of using red pepper in my recipes because it adds color and an amazing flavor. There's a printable recipe card at the bottom of the post.

  • Ground Beef
  • Penne Pasta (I always go with the whole wheat version)
  • 1/4 Cup of Chopped Onion
  • 2 Teaspoons of Chopped Garlic
  • 3/4 Cup of Water
  • Taco Seasoning Packet
  • One Can of Diced Tomatoes
  • 4 ounces of Cream Cheese
  • 1 Red Pepper (sliced)
  • Shredded Mexican Cheddar Cheese
  • Preheat oven to 350.
  • Begin cooking the penne as the package instructs while you cook the ground beef.  Add the onion and garlic to the beef.
  • Once the beef is cooked, drain it then add the water, taco seasoning and diced tomatoes. Simmer for about 5 minutes.
  • Once most of the liquid has reduced, add the cream cheese in small blocks and stir until melted. 
  • Add the cooked pasta and the red peppers to the mix. 
  • Move to a casserole dish or continue using your oven friendly pan like I did.  Mix half of the cheese in with your food and top the food with the remainder of the cheese. 
  • Put the casserole dish in the oven and cook for 30 minutes.
  • Let cool for roughly 5 minutes, then serve!
