Cocoa and Company Party

I love hosting parties!  They're my chance to show off my culinary talents, decorating skills and creativity :)  I have been pretty busy at work, so I haven't had a get-together at my apartment in a year, so it was time to remedy that!  It started with the idea of having a hot cocoa bar, so we named the party Cocoa and Company and then my ideas just kept growing!

Leftover Turkey Pita Pockets

Display Your Cards


 After my husband and I got married, we received many beautiful cards from friends and family that I did not want to simply toss in box then forget.  I had to figure out a way to display these beautiful cards!  I had found a project in a DIY magazine that summer involving rain gutter covers, so I gave it a try!

Halloween 2012 Round Up

It was another fun Halloween celebration this year.  We decorated, baked pumpkin goods, carved pumpkins, handed out candy and as is our yearly tradition, we watched It's the Great Pumpkin, Charlie Brown.

Lazy Slow Cooker Japanese Style Curry


My hubby and I lived in Okinawa, Japan so Japanese food makes an appearance on our dinner table fairly often.  We used to eat at a place called CoCo Ichibanya (CoCos) while we lived on the island because the curry there was absolutely to die for.  What I make is no where near the caliber of Cocos, but it's still pretty delicious and incredibly easy to make. This is recipe is so easy to make that I feel lazy doing it!

Southwestern Turkey Burgers


The hubby and I made a trip to Sam's a week or so ago & bought a GIANT bag of fries, like seriously huge! When we were sitting down to write our meal plan for the week, we looked through the kitchen to see what we already had.  We decided that we better figure out some meals that pair well with fries and our minds went straight to hamburgers.  We agreed that hamburgers and fries is kind of a boring meal, so we decided to make our own turkey burgers with a kick instead!

Mexican Beef Pockets


My mom made a dish that she called "Taco Ring" growing up. It was my favorite recipe that she made and I've taken that recipe and made some changes.  Mine isn't a ring anymore and I added some creaminess with the cream cheese, but it is still much like my momma's recipe :)

Lantern Ghosts


Now that it's the Halloween season, it is time to update our porch!  We have paper lanterns outlining the front of our porch, so it was pretty easy and cheap to turn our lanterns into ghosts with just a few items.

Fabric Frame & T-Shirt Upcycle


Recently, the hubby and I were cleaning out our closet and drawers to get rid of clothes that we don't wear anymore and I landed on a shirt that I didn't want to part with.  I lived in Okinawa growing up and so I wasn't ready to give up this Okinawa shirt.  I've had a frame without the glass (I was a bit clumsy!) lying around for a while that I've been meaning to do something and inspiration hit me; frame the shirt!

Yarn Chandelier


The corner of my bedroom was pretty boring, so I went to Pinterest and found inspiration in the many yarn chandeliers.  Every website seemed to have a different "recipe" for the solution to make the yarn stiffen, so I took from all of them and came up with my own!

Pumpkin Bundt Cake with Cream Cheese Filling and Maple Glaze

Fall is my favorite time of the year.  One of the big reasons is because pumpkin is everywhere!  It's in patches, in plug-ins and Scentsys (pumpkin roll is amazing!), carved and displayed on porches and most relevant to this post; in your recipes!  We made a trip to Sam's Club recently and I purchased a bunch of canned pumpkin to last for this season's baking sessions.

My hubby's birthday is this week, so we decided to celebrate tonight and what's a birthday without cake?!  Last year, I threw my hubby a dinner party, so this year we decided to keep things much more low-key (and much less exhausting!). 

I decided to take a pumpkin cake recipe that I've used before and bring it up a few notches by adding a cream cheese filling and a maple glaze instead of vanilla icing.  I started up the new Mumford and Sons CD on my spotify application and started baking!

End of No-Spend September Report

Well, we made it..for the most part!  My husband and I embarked on a journey to go an entire month without spending money on the "extras" during No-Spend September.  We had a few instances of spending money, but for the majority of the month, we succeeded in our goal to save instead of spend.

We went out with friends and drank water.  We watched our favorite shows on netflix and at the gym (the gym has cable!).  We baked cookies and cupcakes instead of going to a bakery.  We went hiking and walking around our town.  All of this made it easier to save money.

No-Spend September Mid-Month Update

We're mid-way through our No-Spend month and so far the only "extra" that we've spent on was a birthday lunch at work.  I spent $6 on the daily special, so I don't think that's too bad compared my usual trips out to eat with coworkers :)  

We have been making all of our meals at home instead of eating out.  It involved more planning and a bit more grocery shopping, but we've enjoyed it.



Another Camping Adventure

Now that the weather is slightly (only slightly) below 100 degrees here in Texas, my hubby and I decided to go camping again.  We didn't go camping the last two months due to the extreme heat, so we've been looking forward to this trip since we booked it last month.



Home Sweet Home!  We bought this tent a few months ago and I just adore it!  It's the Montana 8 from Coleman.  The C shaped door was great for keeping bugs out and our dogs in.  We kept the pups out with us for the most part, but since they weren't allowed in the bathrooms or the beach part of the lake, it was helpful to have a sure proof way of keeping them in the tent.

No-Spend-September

My husband and I have decided to go a whole month without spending money on the "extras."  We still want things like power, a place to live and food to eat, etc., so we decided to continue paying out bills, but the extra stuff like eating out, going to the movies and sweets runs have got to go.  

My hubby and I both have developed some bad spending habits and those habits are keeping us from achieving our goals, and getting what we want out of life.  Our solution was to spend a whole month without spending money on the "extras."

The first thing we did was come up with our goals for saving money.  We sat down together and created a list during our lunch break. I took that list and created this:

First Camping Trip of the Season

Here in Texas the weather has been between the 60s and 80s lately, so I felt that I better take advantage of the cool weather before it goes away by spending some time in nature!  My hubby and I packed up the dogs and our belongings and headed out to Canyon Lake for the weekend.  I had seen some amazing pictures of "glamping" or glamorous camping on Pinterest, so I decided to try glamping up our trip in some little ways :)
